- 4 tablespoons extra virgin olive oil (60 ml)

- 4 ripe tomatoes, diced (600 g / 1.32 lb)
- 2 tablespoons tomato paste (35 g / 0.08 lb)
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- ½ teaspoon dried oregano
- Salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh parsley (10 g / 0.02 lb)
- 2 tablespoons chopped fresh dill (8 g / 0.02 lb)
- ½ cup vegetable broth or water (120 ml)
- Lemon wedges, for serving (optional)
Directions
- Preheat your oven to 190°C (375°F).
- Slice each eggplant lengthwise, leaving the stem attached if desired. Score the flesh in a crisscross pattern without cutting through the skin.
- Brush the eggplants with olive oil and place them on a baking tray. Roast for 25–30 minutes, or until they begin to soften.
- Meanwhile, heat the remaining olive oil in a large skillet over medium heat.
- Add the sliced onions and cook slowly for about 10–12 minutes until soft and lightly caramelized.
- Stir in the garlic and cook for another minute until fragrant.
- Add the diced tomatoes, tomato paste, paprika, cumin, oregano, salt, and pepper. Simmer for 10–15 minutes, allowing the mixture to thicken.
- Remove the pan from the heat and stir in the chopped parsley and dill.
- Gently press the center of each roasted eggplant to create a pocket, then generously fill each one with the tomato-onion mixture.
- Pour the vegetable broth into the baking dish around the eggplants.
- Return the dish to the oven and bake for 25–30 minutes, until the eggplants are completely tender and the filling is bubbling.
