Instant Pot Chicken Alfredo Pasta: Dinner in a Flash!

This recipe is all about accuracy and deliciousness! Here’s what you’ll need to whip up a creamy, one-pot wonder:

Ingredients:

  • 1 tablespoon vegetable, corn, or canola oil
  • 1 large boneless, skinless chicken breast, cut into 1-inch pieces
  • 2 cups (150 grams) sliced mushrooms (optional)
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground black pepper
  • ½ teaspoon salt
  • 10 oz (300 grams) tagliatelle or fettuccine pasta
  • 2 cups (500 ml) chicken or vegetable stock
  • 5 oz (150 grams) cream cheese, softened
  • 1 cup (200 grams) shredded mozzarella cheese (optional)

Instructions:

  1. Sauté the Chicken: Set your Instant Pot to SAUTE and heat the oil. Add the chicken pieces and cook for a couple of minutes until lightly browned.

  2. Add the Flavor: Throw in the mushrooms (if using), garlic, thyme, rosemary, nutmeg, salt, and pepper. Let the flavors dance for a minute.

  3. Pasta Power: Add the pasta and pour in the chicken or vegetable stock. Gently press the pasta with a spatula to ensure it’s submerged in the liquid. If needed, add more stock or water to cover everything.

  4. Pressure Cook Perfection: Secure the lid and set the vent to SEALING. Select PRESSURE COOK/MANUAL and cook on high pressure for 5 minutes. The Instant Pot will take about 5 minutes to come to pressure before starting the cook time. Once done, use a quick pressure release.

  5. Creamy Dream: Carefully remove the lid and stir in the softened cream cheese and mozzarella cheese (if using). Keep stirring until the cheese melts completely and forms a creamy sauce. Taste and adjust seasonings as desired.

Tips:

  • This recipe is tested for a 6-quart Instant Pot. Adjust cooking time slightly for different sized pots.
  • For a thicker sauce, after pressure cooking and adding cheese, mix 1 teaspoon of cornstarch with 1 teaspoon of water and stir it into the pot.
  • Like your pasta al dente? Reduce the cooking time to 4 minutes under pressure.
  • Lighten it up! Use light cream cheese and skip the mozzarella for a healthier version.
  • Cheese fiesta! Feel free to experiment with your favorite shredded cheese varieties.

Enjoy this quick and flavorful Instant Pot Creamy Chicken and Mushroom Pasta!
