PREP TIME: 10 mins
COOK TIME: 20 mins
TOTAL TIME: 30 mins
Ingredients:
Ground turkey meat 1 lb
5 cloves of garlic, minced and divided
1 egg
1/2 cup freshly grated Romano cheese
2 teaspoons Italian seasoning
2 teaspoons chopped fresh parsley
Salt and ground black pepper to taste
1 cup whole wheat panko bread
1/2 cup lukewarm.
4 ounces mozzarella cheese, cut into bite sized cubes (you can use 4 (1 ounce) string cheese pieces, too)
6 tablespoons olive oils, divided
1 can (28-ounces) crushed tomatoes
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon sugar
2 teaspoons Italian seasoning
1/2 teaspoon crushed red pepperflakes
Instructions:
Pre-heat oven to 400°F. Place parchment paper on a large baking sheet.
Over medium heat, heat 4 tablespoons olive oil in large skillet. While you make the meatballs, let the oil simmer.
Combine the ground turkey meat with half of the minced garlic. Add half of the cheese, egg, parsley, Italian seasoning, salt, and panko to a large bowl. Slowly add water to the mixture, just a few drops at a time. When you roll the mixture into meatballs, it should be very moist.
Take one tablespoon of meat and form a small ball. Place a small amount of cheese into the middle. Cover it with another piece. Roll to seal the cheese. Continue with all meats/cheese.
In batches, fry meatballs in hot oil for 2 minutes each side.
Place the semi-cooked meatballs onto a baking sheet. After all the meatballs are panfried, place the baking sheets in the oven for 10-12 minutes or until they’re done.
Make your marinara while the meatballs are baking!
In the same pan as the meatballs, heat the remaining oil. Add the remaining garlic to the pan and cook for 1 minute or until fragrant and golden. Mix together the crushed tomatoes, salt and pepper, sugar, seasoning, crushed red pepper flakes, and seasoning. Let the sauce simmer for 9 minutes, stirring frequently. Add salt and pepper to your liking.
Once the meatballs have been cooked, add them to your sauce and stir.
