This bake has become one of our favorite dishes whenever we want something that looks impressive without spending all day in the kitchen. For the Vegetable Layers

  • 550 g / 1.21 lb sweet potatoes, peeled and thinly sliced
  • 500 g / 1.10 lb butternut squash, peeled, seeded, and thinly sliced
  • 350 g / 0.77 lb carrots, peeled and thinly sliced
  • 35 g / 0.08 lb extra-virgin olive oil
  • 1 tsp dried thyme (about 1 g / 0.002 lb)
  • 1/2 tsp ground cinnamon (about 1.5 g / 0.003 lb)
  • 1/2 tsp smoked paprika (about 1 g / 0.002 lb)
  • 1 tsp salt (about 6 g / 0.013 lb)
  • 1/4 tsp freshly ground black pepper (about 0.5 g / 0.001 lb)
  • 2 garlic cloves, finely minced (about 6 g / 0.01 lb)

For the Cranberry-Honey Drizzle

  • 100 g / 0.22 lb fresh or frozen cranberries
  • 45 g / 0.10 lb honey
  • 20 g / 0.04 lb fresh orange juice
  • 1 tsp orange zest (about 2 g / 0.004 lb)
  • 1 tbsp water (about 15 g / 0.03 lb)
  • 1 tsp lemon juice (about 5 g / 0.01 lb)
  • Pinch of salt

For Finishing

  • 15 g / 0.03 lb fresh parsley or thyme, chopped
  • 30 g / 0.07 lb toasted pecans or walnuts, roughly chopped, optional
  • Flaky sea salt, to taste

Directions

  1. Prepare the oven and baking dish: Preheat the oven to 190°C / 375°F. Lightly grease a round or oval baking dish with a little olive oil.
  2. Slice the vegetables: Peel the sweet potatoes and carrots, then prepare the squash. Slice all three vegetables into thin, even pieces. Keeping the slices similar in thickness will help them cook at the same rate.
  3. Season the vegetables: Place the sliced vegetables in a large bowl. Add the olive oil, thyme, cinnamon, smoked paprika, salt, pepper, and minced garlic. Toss gently until everything is evenly coated.
  4. Create the layers: Arrange the sweet potato, squash, and carrot slices in overlapping layers inside the prepared baking dish. You can alternate the vegetables for a colorful striped effect or create separate layers of each vegetable.
  5. Cover and bake: Cover the dish tightly with foil and bake for approximately 35–40 minutes. The steam will help soften the vegetables without drying them out.
  6. Finish uncovered: Remove the foil and continue baking for another 20–25 minutes, or until the vegetables are completely tender and the edges are lightly caramelized.
  7. Make the cranberry drizzle: While the bake is cooking, place the cranberries, honey, orange juice, orange zest, water, lemon juice, and a pinch of salt in a small saucepan. Cook over medium-low heat for about 6–8 minutes, stirring occasionally, until the cranberries soften and begin to burst.
  8. Blend or mash the sauce: Lightly mash the cranberries with the back of a spoon for a rustic texture. For a smoother drizzle, blend the mixture briefly and strain it if desired. Add a splash of water if the sauce becomes too thick.
  9. Finish the bake: Once the vegetables are tender and golden, remove them from the oven and let them rest for a few minutes. Drizzle the cranberry-honey sauce over the top.
  10. Garnish and serve: Sprinkle with fresh herbs, toasted pecans or walnuts, and a little flaky sea salt. Serve warm as a beautiful side dish.

Notes

  • Slice evenly: A mandoline can make slicing the vegetables easier, but use caution and always protect your hands.
  • Don’t make the slices too thick: Thin, even slices cook more consistently and create prettier layers.
  • Squash substitution: Acorn squash, delicata squash, or pumpkin can be used instead of butternut squash.
  • Add warming spices: A pinch of nutmeg, ginger, or allspice can complement the sweet vegetables beautifully.
  • Make it more savory: Sprinkle a little crumbled feta, goat cheese, or Parmesan over the finished bake.
  • Nut-free option: Leave out the nuts or use toasted pumpkin or sunflower seeds for crunch.
  • Cranberry shortcut: If fresh or frozen cranberries aren’t available, unsweetened cranberry preserves can be loosened with orange juice and warmed with a little honey.
  • Make ahead: Assemble the vegetable layers several hours ahead, cover, and refrigerate. Allow the dish to sit at room temperature briefly before baking.
