  • 1 large skin-on salmon fillet (about 1.4 kg or 3 lb.)
  • Kosher salt
  • Freshly ground black pepper
  • 2 cloves garlic, finely chopped
  • 6 tbsp. (85g) unsalted butter, melted
  • 2 tbsp. honey
  • 1 tsp. chopped fresh thyme leaves
  • 1 tsp. dried oregano
  • Chopped fresh parsley, for serving

Directions:

  1. Preheat the oven to 350°F (175°C). Line a large rimmed baking sheet with foil, ensuring the foil is lined with parchment to prevent interaction of lemon slices with the foil. Arrange lemon slices evenly in the center of the parchment.
  2. Season the salmon fillet with salt and pepper, then place it on top of the lemon slices.
  3. In a small bowl, whisk together garlic, melted butter, honey, thyme, and oregano until well combined. Pour the mixture over the salmon, then fold up the parchment and foil around the salmon.
  4. Bake the salmon in the preheated oven until it is opaque, cooked through, and the flesh easily flakes with a fork, approximately 25 minutes.
  5. Switch the oven to broil. Broil the salmon, watching closely, until it is browned in spots, for about 4 to 6 minutes.
  6. Before serving, top the salmon with chopped fresh parsley for an added burst of freshness.
