- 1/2 cup (125 g / 4.4 oz) whole-milk ricotta
- 1 1/4 cups (140 g / 0.31 lb) shredded low-moisture mozzarella
- 1/4 cup (25 g / 0.9 oz) finely grated Parmesan
- 1 small lemon — about 3 oz (85 g), thinly sliced
- 1 tsp (2 g) fresh lemon zest
- 1/2 tsp (1 g) dried oregano
- 1/4 tsp (1 g) freshly ground black pepper
- 1/4 tsp (1 g) chili flakes, optional
- 1 tbsp (4 g) fresh thyme leaves
For Finishing
- 1 tbsp (15 ml) extra-virgin olive oil
- 2 tbsp (5 g / 0.2 oz) fresh basil leaves
- Flaky sea salt, to taste
- Extra lemon zest, optional
Directions
- Prepare the oven: Place a pizza stone or heavy baking sheet in the oven and preheat to 475°F (245°C). Allow the oven to heat thoroughly for at least 30 minutes.
- Prepare the dough: Let the pizza dough come to room temperature for about 20–30 minutes. Lightly flour your work surface and stretch or roll the dough into a roughly 12-inch (30 cm) round.
- Prepare the lemon: Wash the lemon thoroughly and slice it as thinly as possible. Remove any visible seeds. If the peel seems particularly thick or bitter, use only a small amount of the peel or remove it before slicing.
- Make the garlic oil: Combine the olive oil with the grated garlic in a small bowl. Set aside for a few minutes so the garlic can infuse the oil.
- Build the pizza: Carefully transfer the dough onto a piece of parchment paper or a lightly floured pizza peel. Spread the ricotta evenly over the surface, leaving a small border around the edge.
- Add the cheese: Scatter the mozzarella and Parmesan over the ricotta. Arrange the thin lemon slices across the top.
