Loaded Chicken and Potatoes Recipe: The Whole Family Loved It

This Loaded Chicken and Potatoes Recipe is a quick, easy and super delicious dish. Even the kids loved it!

This recipe for loaded chicken and potatoes is sure to please the whole family. The chicken is cooked in a flavorful gravy and then topped with bacon, cheese, and green onions. The potatoes are roasted to perfection and add the perfect amount of creaminess to the dish. Serve this dish with a side of steamed broccoli or green beans for a complete meal.

Ingredients:

1 lb boneless chicken breasts, cubed
6-8 medium skin red potatoes cut into 1/2 cubes
1/3 c olive oil
1 1/2 teaspoon salt
1 teaspoon black pepper
1 Tbsp paprika
2 Tbsp garlic powder
2 tablespoons hot sauce (or more depending on how spicy you like it).

Topping:

2 c fiesta cheese
1 c crumbled bacon
1 c chopped green onion

Directions: 

Pre-heat oven to 400°F Spray a 9X13′” baking dish with cooking spray.

Mix together the olive oil with salt, pepper, garlic powder, hot sauce, and paprika in a large bowl.

Stir together the chicken and cubed potatoes. Place the chicken and potatoes in a baking dish.

Bake the chicken and potatoes for 55-60 minutes. Stir every 20 minutes until they are cooked through and crispy on the outside.

While the potatoes cook, fry the bacon (about half a pound). Once the chicken and potatoes are cooked through, take them out of the oven.

Serve the potatoes with cheese, bacon, green onion, and bacon.
Bake the casserole for 5 minutes, or until the cheese is melted.
