This Mediterranean Vegetable Galette is a beautiful celebration of fresh vegetables, creamy cheese, fragrant herbs, and golden flaky pastry. Colorful zucchini, bell peppers, tomatoes, and red onion are layered over a savory cheese filling before being wrapped in a rustic pastry crust and baked until beautifully golden. It’s hearty enough for a light dinner, delicious for lunch, and elegant enough to serve at a weekend brunch or summer gathering.

This Mediterranean galette has become one of my favorite ways to turn a collection of fresh vegetables into something my whole family gets excited about. My husband especially loves the combination of the buttery crust and roasted vegetables, and he always seems to find a reason to come into the kitchen while it’s baking.

The first time I made it, I wasn’t sure how my family would react to so many vegetables in one dish. But once the galette came out of the oven with its golden crust and colorful filling, everyone wanted a slice. Now it’s a regular whenever we have extra zucchini, peppers, or tomatoes waiting in the refrigerator.

I love serving it warm with a simple salad. It feels comforting without being too heavy, and the leftovers make an especially delicious lunch the next day.

Ingredients

Serves 6–8

For the Pastry

  • 1 1/2 cups (190 g / 0.42 lb) all-purpose flour
  • 1/2 tsp (3 g) fine salt
  • 1 tsp (4 g) granulated sugar
  • 1/2 cup (115 g / 0.25 lb) cold unsalted butter, cut into small cubes
  • 4–5 tbsp (60–75 ml) ice water
  • 1 tsp (5 ml) fresh lemon juice, optional

For the Vegetable Filling

  • 1 medium zucchini — about 7 oz (200 g / 0.44 lb), thinly sliced
  • 1 red bell pepper — about 5 oz (140 g / 0.31 lb), thinly sliced
  • 1 yellow bell pepper — about 5 oz (140 g / 0.31 lb), thinly sliced
  • 1 small red onion — about 4 oz (115 g / 0.25 lb), thinly sliced
  • 2 medium tomatoes — about 10 oz (280 g / 0.62 lb), thinly sliced
  • 2 garlic cloves, minced — about 0.2 oz (6 g)
  • 2 tbsp (30 ml) extra-virgin olive oil
  • 1 tsp (1 g) dried oregano
  • 1/2 tsp (1 g) dried thyme
  • 1/2 tsp (3 g) salt
  • 1/4 tsp (1 g) freshly ground black pepper
  • 1/4 tsp (1 g) red pepper flakes, optional

For the Cheese Layer

  • 3/4 cup (185 g / 0.41 lb) whole-milk ricotta
  • 3 oz (85 g / 0.19 lb) crumbled feta cheese
  • 1/4 cup (25 g / 0.9 oz) finely grated Parmesan
  • 1 tbsp (4 g / 0.14 oz) chopped fresh basil
  • 1 tsp (2 g) lemon zest

For the Egg Wash

  • 1 large egg — about 2 oz (55 g)
  • 1 tbsp (15 ml) water

For Finishing

  • 1 tbsp (15 ml) extra-virgin olive oil
  • Fresh basil or parsley
  • Flaky sea salt
  • Lemon wedges, optional

Directions

  1. Prepare the pastry: Combine the flour, salt, and sugar in a large bowl. Add the cold butter and work it into the flour with your fingertips or a pastry cutter until coarse crumbs form, leaving a few small pieces of butter intact.
  2. Bring the dough together: Gradually add the ice water, one tablespoon at a time, gently mixing until the dough just comes together. Add the lemon juice if using. Avoid kneading the dough.
  3. Chill: Shape the dough into a flat disk, wrap it tightly, and refrigerate for at least 30 minutes.
  4. Prepare the vegetables: Preheat the oven to 425°F (220°C). Arrange the zucchini, peppers, red onion, and tomatoes on a large baking sheet. Drizzle with olive oil and sprinkle with garlic, oregano, thyme, salt, pepper, and red pepper flakes.
  5. Roast the vegetables: Spread the vegetables in a relatively even layer and roast for approximately 15–20 minutes, just until they begin to soften and some of their moisture has evaporated. Allow them to cool slightly.
  6. Make the cheese mixture: In a bowl, combine the ricotta, feta, Parmesan, fresh basil, and lemon zest. Stir until evenly combined.
  7. Roll out the dough: Reduce the oven temperature to 400°F (200°C). Place the chilled dough on a sheet of parchment paper and roll it into a rough 12-inch (30 cm) circle. The edges can remain rustic and uneven.
  8. Add the cheese layer: Spread the ricotta mixture over the center of the pastry, leaving approximately a 2-inch (5 cm) border around the edges.
  9. Layer the vegetables: Arrange the roasted vegetables over the cheese mixture. Try to distribute the different colors evenly for a beautiful finished galette.
  10. Fold the crust: Carefully fold the exposed pastry border inward over the vegetables, working around the galette in sections. Leave the center open.
  11. Brush with egg wash: Whisk the egg with the water and lightly brush it over the folded pastry edges.
  12. Bake: Transfer the galette on its parchment paper to a baking sheet. Bake for approximately 35–45 minutes, until the crust is deeply golden and crisp.
  13. Rest: Remove the galette from the oven and let it sit for about 10–15 minutes. This allows the filling to settle and makes slicing easier.
  14. Finish and serve: Drizzle lightly with olive oil and scatter fresh basil or parsley over the top. Add a pinch of flaky sea salt and serve warm or at room temperature.

Notes

  • Roast the vegetables first: This is one of the most important steps because it removes excess moisture and concentrates their flavor, helping prevent a soggy crust.
  • Don’t overcrowd the baking sheet: Spread the vegetables out as much as possible so they roast instead of steaming.
  • Use seasonal vegetables: Eggplant, mushrooms, asparagus, cherry tomatoes, or roasted red peppers can easily be added or substituted.
  • Cheese substitutions: Goat cheese can replace the ricotta, while mozzarella can be added for extra meltiness.
  • Add Mediterranean flavor: Kalamata olives, sun-dried tomatoes, artichoke hearts, or a spoonful of pesto make delicious additions.
  • Fresh herbs: Basil, parsley, oregano, rosemary, and thyme all work beautifully.
  • Make it spicy: Add extra red pepper flakes or a drizzle of chili oil after baking.
  • Keep the pastry cold: If the dough becomes soft while you’re assembling the galette, place it in the refrigerator for 10–15 minutes before baking.
  • Make ahead: The pastry can be prepared up to 2 days ahead. The vegetables can also be roasted in advance and refrigerated until you’re ready to assemble.
  • Storage: Refrigerate leftover galette in an airtight container for up to 3 days. Reheat in the oven to bring back some of the pastry’s crispness.
  • Serving suggestion: Pair it with a crisp green salad, lemony arugula, or a simple Mediterranean cucumber salad.
