  • 225g (8 oz) fresh mushrooms, sliced

  • 2 garlic cloves, minced

  • 45g (3 tbsp) tomato paste

  • 425g (1 can, 15 oz) diced tomatoes

  • 480ml (2 cups) beef broth

  • 15ml (1 tbsp) Worcestershire sauce

  • ½ tsp dried thyme

  • 5g (1 tsp) granulated sugar

  • A pinch of celery seed (optional)

  • 16g (2 tbsp) cornstarch + 30ml (2 tbsp) water (optional, for thickening)


Instructions

  1. Prep the Oven: Start by preheating your oven to 165°C (325°F).

  2. Coat & Brown the Steak: In a shallow dish, mix flour with salt, pepper, and garlic powder. Dredge the steak pieces in the mixture, making sure each piece is well coated. In a large oven-safe pot or Dutch oven, heat oil over medium-high heat. Sear the steak until browned on both sides. Once done, transfer the meat to a plate.

  3. Sauté the Veggies: Using the same pot, add the chopped onion, celery, bell pepper, and mushrooms. Cook over medium heat until softened, about 5 minutes. Stir in the minced garlic and tomato paste, and let it cook for another minute or two until aromatic.
