Ingredients

Pasta & Sauce

  • 450g (1 lb) uncooked spaghetti
  • 450g (1 lb) Italian sausage, casing removed
  • 1/2 medium onion, chopped
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1.4kg (48 oz) marinara sauce (2 jars)
  • 2 cups shredded mozzarella cheese
  • Salt & pepper, to taste

Cheese Layer

  • 225g (8 oz) cream cheese, softened
  • 225g (8 oz) ricotta cheese
  • 1 cup freshly grated parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano

Directions

  1. Preheat & Prepare: Preheat your oven to 375°F (190°C) and adjust the rack to the top third of the oven.
  2. Make the Cheese Mixture: In a medium bowl, combine all the cheese layer ingredients. Mix well until smooth and set aside.
  3. Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti for 2 minutes less than the package suggests. Drain and return it to the pot.
  4. Prepare the Sauce: In a large skillet over medium-high heat, cook the sausage and onion for about 10 minutes, breaking it apart as it cooks. Once browned, stir in the garlic and red pepper flakes, cooking for an additional minute. Drain excess fat.
  5. Combine Everything: Add the cooked sausage mixture and marinara sauce to the pot of spaghetti. Toss everything together until evenly coated.
  6. Assemble the Casserole:
    • Spread half of the pasta mixture into a greased 9×13 baking dish.
    • Evenly spread the cheese mixture on top of the pasta layer.
    • Add the remaining pasta mixture and smooth it out.
    • Sprinkle the shredded mozzarella cheese on top.
  7. Bake & Broil: Cover with foil and bake for 30 minutes. Remove the foil and broil for a few minutes until the cheese turns golden and bubbly. Keep an eye on it to avoid burning.
  8. Rest & Serve: Let the casserole sit for 5-10 minutes before slicing into portions. Add extra salt and pepper if needed.
