Lace Cookies, often called Florentine Cookies, are thin and chewy oatmeal treats with a delightfully sweet flavor. These cookies are perfect for stacking, making them an ideal choice for gifting. Made with just 7 simple ingredients, Oatmeal Lace Cookies are incredibly quick and easy to whip up!

Ingredients

2 ¼ cups rolled oats
1 teaspoon vanilla
1 egg
1 teaspoon salt
3 tablespoons flour all purpose

1 cup butter salted
2 ¼ cups brown sugar

Instructions

Preheat your oven to 375°F and line your cookie sheets with parchment paper.

In a small saucepan over medium heat, cook the butter until it turns a rich brown color and emits a nutty aroma. Remove from heat and let it cool for about 5 minutes.

In a mixing bowl or stand mixer, combine the brown sugar, oats, egg, and vanilla. Gradually pour in the browned butter, mixing until fully incorporated.

Add the salt and flour, stirring until just combined.

Using a cookie scoop, drop the dough onto the prepared cookie sheets, leaving enough space between each for spreading. Bake for 6 minutes, or until the cookies are golden brown.

Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to finish cooling.
