Ingredients:

4 boneless, skinless chicken breasts or 6 chicken thighs
3 tablespoons vegetable oil or canola oil
1 cup uncooked white Rice
2 1/4 cups chicken broth low in sodium
1 lemon
For garnish, chop cilantro or parsley

Mixture of Spanish Seasonings:

2 teaspoons Smoked Paprika
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon coriander (see Note)
1/4 teaspoon Italian seasoning

Instructions:

Mix all the ingredients for the Spanish seasoning mixture in a small bowl. Divide the mixture in half and place aside. Slice the lemon in half and then cut the other half thinly – to garnish – and save the rest for later.

Place the chicken in a large bowl. Toss the chicken in a medium bowl with 2 tablespoons of oil. Rub half of the prepared seasoning mixture on each chicken piece.

Use the remaining oil to brush a large, heavy-bottomed skillet. Heat on medium heat. Broil the chicken until golden brown. Transfer the chicken to a plate. It won’t be cooked to this point.

Stir together rice, chicken broth and juice from 1/2 lemon. Place the chicken back in the pan, on top of the rice. Cook covered for 20-25 minutes, or until liquid has absorbed and rice is tender.

Serve immediately with fresh chopped cilantro or parsley, and garnish with lemon slices.
