Ingredients (Serves 4)

  • Sweet onions: 4 large (about 1,200 g / 2.65 lb)

  • Butter: 60 g (0.13 lb / 4 tbsp), divided

  • Chili onion crunch: 10 g (0.02 lb / 2 tsp)

  • Minced garlic: 6 g (0.01 lb / 2 tsp)

  • Paprika (smoked or regular): 4 g (0.01 lb / 2 tsp)

  • Old Bay seasoning: 4 g (0.01 lb / 2 tsp)

  • Cajun seasoning: 4 g (0.01 lb / 2 tsp)

  • Italian seasoning: 4 g (0.01 lb / 2 tsp)

  • Salt: 3 g (0.007 lb / 1 tsp)

  • Ground black pepper: 2 g (0.004 lb / 1 tsp)

Directions

  1. Preheat your oven to 190°C (375°F).

  2. Peel the onions and trim the root end slightly so they sit flat.

  3. Using a small knife, cut a circular opening at the top of each onion, about 2.5 cm (1 inch) wide. Carefully scoop out the center to form a deep well without cutting through the bottom.

  4. Cut half of the butter into small cubes and place a portion inside each onion well.

  5. Melt the remaining butter in a small bowl. Stir in the chili onion crunch, garlic, paprika, Old Bay, Cajun seasoning, Italian seasoning, salt, and pepper until fully combined.

  6. Spoon the butter mixture into the center of each onion and brush some over the outer layers.

  7. Wrap each onion tightly in foil and place them upright in a baking dish.

  8. Bake for 50–60 minutes, until the onions are very tender when pierced with a fork.

  9. Carefully open the foil. Add extra butter or seasoning if desired, then serve hot.

Notes

  • Extra richness: Add a final pat of butter before serving for even more flavor.

  • Milder version: Reduce Cajun seasoning or skip chili onion crunch.

  • Cheesy twist: Sprinkle grated Parmesan on top after baking.
