If you think cabbage is boring, this recipe will completely change your mind. These oven-roasted garlic cabbage steaks are crispy on the edges, tender in the center, and packed with smoky, savory flavor. Made with simple pantry spices and roasted to perfection, they’re an easy side dish that feels hearty, satisfying, and surprisingly crave-worthy.

The first time I made these cabbage steaks, my husband was very skeptical. Cabbage? As the main star? But after one bite, he went back for seconds—and then thirds. Now, every time I pull a cabbage out of the fridge, he already knows what’s coming. It’s one of those recipes that proves simple vegetables, when cooked the right way, can become a family favorite that everyone actually asks for.

Why This Oven-Roasted Garlic Cabbage Steaks

  • Roasted until golden and crispy, never soggy

  • Seasoned with warm garlic and smoky spices

  • Budget-friendly, made with everyday ingredients

  • Naturally vegetarian and easy to make dairy-free

  • Perfect as a side dish or light main meal

Ingredients (Serves 4–5)

  • Green or red cabbage: 2 large heads (about 2.4 kg / 5.3 lb total)

  • Olive oil or melted butter: 90 g (0.2 lb / about 6 tablespoons)

  • Garlic powder: 6 g (0.01 lb / 2 teaspoons)

  • Smoked paprika: 6 g (0.01 lb / 2 teaspoons)

  • Onion powder: 3 g (0.007 lb / 1 teaspoon)

  • Dried thyme: 3 g (0.007 lb / 1 teaspoon)

  • Salt: 6 g (0.01 lb / about 2 teaspoons, adjust to taste)

  • Black pepper: 3 g (0.007 lb / 1 teaspoon)

Optional toppings:

  • Grated Parmesan cheese

  • Red pepper flakes

  • Fresh parsley, finely chopped

Directions

  1. Preheat your oven to 400°F (200°C). Prepare a large baking tray with parchment paper or lightly coat it with oil.

  2. Remove any damaged outer leaves from the cabbage. Using a sharp knife, cut each cabbage into thick slices about 2 cm (¾ inch) wide, keeping the core intact so the slices hold together.

  3. In a small bowl, combine the olive oil (or butter), garlic powder, smoked paprika, onion powder, thyme, salt, and black pepper.

  4. Lay the cabbage steaks flat on the baking sheet. Brush the seasoning mixture generously over both sides of each steak.

  5. Arrange the cabbage in a single layer, leaving space between pieces for even roasting.

  6. Roast for 25–30 minutes, carefully flipping halfway through, until the edges are deeply golden and slightly crisp.

  7. Remove from the oven and finish with your favorite toppings before serving.

Notes

  • Extra crispiness: Roast on the top rack for the last 5 minutes.

  • Cheesy version: Sprinkle Parmesan during the final 5 minutes of baking.

  • Vegan option: Use olive oil and skip cheese or add nutritional yeast.

  • Spice it up: Add chili powder or cayenne for heat.

  • Nutrition tip: Cabbage is rich in fiber, vitamin C, and antioxidants, making this dish both comforting and healthy.
