This recipe for Pineapple Barbecue Chicken is a great one to whip together when you’re feeling like having a delicious, juicy, and savory meal with minimal effort!
INGREDIENTS:
1 lb (4 oz each) of boneless, skinless chicken breasts
Salt and freshly ground pepper, to taste
1/2 cup low-sugar honey barbecue sauce (or your favorite low-sugar barbecue sauce) divvied *
1 can (20 ounces), pineapple chunks, drained
1/2 teaspoon extra virgin olive oil
INSTRUCTIONS:
Use cooking spray to grease a baking dish. Season the chicken breasts with salt & pepper.
Place chicken in a baking dish. Top with 1/3 of the barbecue sauce. Rub in the barbecue sauce again and garnish with pineapple chunks.
Cover the top with remaining barbecue sauce and wrap in plastic wrap. Put in refrigerator for between 30 and 2 hours.
Preheat oven to 400F when ready to bake. Take off the plastic wrap. Olive oil can be drizzled over the chicken.
Bake covered for 40 minutes or until the internal temperature of the chicken reaches 165F. Take out of oven and let cool before serving.
