- 5 cups (150 g / 0.33 lb) fresh spinach, roughly chopped
- 1 medium onion, finely diced (160 g / 0.35 lb)
- 3 garlic cloves, minced (12 g / 0.03 lb)
- 1 medium red bell pepper, diced (150 g / 0.33 lb)
- 2 tablespoons olive oil (30 g / 0.07 lb)
- 1 teaspoon smoked paprika
- 1 teaspoon Italian herb seasoning
- ½ teaspoon ground cumin
- Salt and freshly ground black pepper, to taste
- 1 cup (240 ml) vegetable broth
- 1 cup (115 g / 0.25 lb) shredded mozzarella cheese
- ½ cup (50 g / 0.11 lb) grated Parmesan cheese
- 2 tablespoons chopped fresh parsley for garnish
Directions
- Preheat your oven to 190°C (375°F) and lightly grease a medium baking dish.
- Cook the quinoa according to the package directions until fluffy, then set it aside.
- Warm the olive oil in a large skillet over medium heat. Sauté the onion for about 4–5 minutes until softened.
- Stir in the garlic and diced bell pepper, cooking for another 2 minutes until fragrant.
- Add the chopped spinach and cook just until wilted.
- Mix in the cooked lentils, quinoa, smoked paprika, Italian seasoning, cumin, salt, and pepper.
- Pour in the vegetable broth and stir until everything is evenly combined.
- Transfer the mixture into the prepared baking dish and spread it into an even layer.
- Sprinkle the mozzarella followed by the Parmesan evenly over the top.
- Bake for 25–30 minutes, or until the cheese is melted, bubbly, and lightly golden.
