For the Roasted Carrots

  • 700 g / 1.54 lb medium carrots, peeled and trimmed
  • 25 g / 0.06 lb extra-virgin olive oil
  • 1/2 tsp ground cumin (about 1 g / 0.002 lb)
  • 1/2 tsp smoked paprika (about 1 g / 0.002 lb)
  • 1/2 tsp kosher salt (about 3 g / 0.007 lb)
  • 1/4 tsp freshly ground black pepper (about 0.5 g / 0.001 lb)

For the Whipped Ricotta

  • 250 g / 0.55 lb whole-milk ricotta
  • 15 g / 0.03 lb extra-virgin olive oil
  • 15 g / 0.03 lb fresh lemon juice
  • 1/4 tsp salt (about 1.5 g / 0.003 lb)
  • 1 tbsp finely grated Parmesan (about 8 g / 0.02 lb), optional

For the Hot Honey Topping

  • 45 g / 0.10 lb honey
  • 1/4–1/2 tsp red pepper flakes (about 0.5–1 g / 0.001–0.002 lb)
  • 1 tsp fresh lemon juice (about 5 g / 0.01 lb)

For Finishing

  • 15 g / 0.03 lb fresh parsley, chopped
  • 20 g / 0.04 lb pistachios, roughly chopped, optional
  • A little extra olive oil, for drizzling
  • Flaky sea salt, to taste

Directions

  1. Heat the oven: Preheat your oven to 220°C / 425°F. Line a large baking sheet with parchment paper for easier cleanup.
  2. Season the carrots: Place the carrots on the baking sheet and drizzle with olive oil. Sprinkle over the cumin, smoked paprika, salt, and black pepper. Toss thoroughly until every carrot is lightly coated.
  3. Roast until caramelized: Spread the carrots out in a single layer, leaving enough space between them for proper browning. Roast for approximately 25–35 minutes, turning them halfway through, until tender, golden, and caramelized around the edges.
  4. Whip the ricotta: While the carrots roast, add the ricotta, olive oil, lemon juice, salt, and Parmesan if using to a food processor. Blend until smooth, airy, and creamy. Taste and adjust the seasoning if needed.
  5. Prepare the hot honey: Place the honey in a small saucepan or microwave-safe bowl. Warm it gently, then stir in the red pepper flakes and lemon juice. Let it sit for a few minutes so the chili infuses the honey.
  6. Build the dish: Spread the whipped ricotta onto a large serving platter or shallow dish. Arrange the hot roasted carrots over the ricotta.
  7. Add the finishing touches: Drizzle the warm hot honey generously over the carrots and ricotta. Sprinkle with fresh parsley and chopped pistachios, then finish with a small drizzle of olive oil and a pinch of flaky sea salt.
  8. Serve immediately: Serve while the carrots are warm and the ricotta is cool and creamy. Spoon some ricotta, carrot, and hot honey together for the best combination of flavors.

Notes

  • Choose the right carrots: Look for carrots that are similar in size so they roast evenly. Larger carrots can be halved lengthwise.
