For the Dough
- 4 cups all-purpose flour (500 g / 1.10 lb)
- 1 cup warm milk (240 ml)
- 2¼ teaspoons instant yeast (7 g / 0.02 lb)
- 2 tablespoons granulated sugar (25 g / 0.06 lb)
- ¼ cup unsalted butter, melted (60 g / 0.13 lb)
- 1 large egg
- 1 teaspoon salt (5 g / 0.01 lb)
For the Meat Filling
- 1½ lb lean ground beef (680 g / 1.50 lb)
- 1 large onion, finely diced (180 g / 0.40 lb)
- 2 garlic cloves, minced (10 g / 0.02 lb)
- 2 tablespoons butter (28 g / 0.06 lb)
- 2 tablespoons chopped fresh parsley (10 g / 0.02 lb)
- 1 teaspoon paprika
- ½ teaspoon dried thyme
- ½ teaspoon black pepper
- 1 teaspoon salt
- 2 tablespoons beef broth (30 ml) (optional, for extra moisture)
For the Egg Wash
- 1 large egg
- 1 tablespoon milk (15 ml)
Directions
- In a large bowl, combine the warm milk, sugar, and yeast. Let the mixture stand for 5–10 minutes until foamy.
- Add the melted butter, egg, salt, and flour. Mix until a soft dough forms.
- Knead the dough for 8–10 minutes until smooth and elastic. Place it in a lightly greased bowl, cover, and let it rise for about 1 hour, or until doubled in size.
- Meanwhile, melt the butter in a skillet over medium heat. Cook the onion for about 5 minutes until softened.
- Add the garlic and cook for another 30 seconds, then stir in the ground beef. Cook until browned, breaking it into small pieces as it cooks.
- Season with paprika, thyme, salt, and black pepper. Stir in the parsley and beef broth, if using. Remove from the heat and let the filling cool completely.
- Preheat the oven to 190°C (375°F) and line a baking tray with parchment paper.
- Divide the dough into 12 equal portions. Roll each into a circle about 5 inches (13 cm) wide.
- Spoon a generous amount of the cooled meat filling into the center of each dough circle. Fold the dough over the filling and pinch the edges tightly to seal.
- Arrange the hand pies seam-side down on the prepared baking tray.
- Whisk together the egg and milk, then brush each pie generously with the egg wash.
- Bake for 22–28 minutes, or until the Piroshki are puffed and beautifully golden brown.
- Let them cool for a few minutes before serving warm.
