Ingredients (Serves 6–8):

  • 500 g (1.1 lb) fresh spinach, chopped
  • 1 small onion, finely chopped (80 g / 0.18 lb)
  • 2 garlic cloves, minced (10 g / 0.02 lb)
  • 200 g (0.44 lb) feta cheese, crumbled
  • 2 large eggs (about 100 g / 0.22 lb)
  • 120 g (0.26 lb) plain yogurt or cream
  • 2 tablespoons olive oil (30 g / 0.07 lb)
  • 1 package pie dough or pastry sheets (about 300 g / 0.66 lb)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried oregano or thyme

Directions:

  1. Preheat your oven to 180°C (350°F) and grease a baking dish or pie pan.
  2. Heat olive oil in a pan over medium heat. Add the chopped onion and cook until soft and translucent.
  3. Stir in the garlic and cook for another minute until fragrant.
  4. Add the spinach and cook until wilted. Remove from heat and let it cool slightly.
  5. In a mixing bowl, combine the cooked spinach mixture with feta cheese, eggs, yogurt (or cream), and seasonings. Mix well.
  6. Roll out the pie dough and place it into the prepared pan, pressing gently into the edges.
  7. Pour the spinach filling into the crust and spread evenly.
  8. Fold or shape the edges of the dough for a rustic look.
  9. Bake for 35–40 minutes, or until the crust is golden and the filling is set.
  10. Let it cool slightly before slicing and serving.
