This soup quickly became one of those recipes our little family asks for whenever we want something warm and comforting. My husband especially loves street corn, so I wanted to bring those smoky, creamy, slightly tangy flavors into a bowl of soup. The first time I made it, I served it with plenty of toppings, and everyone immediately went back for another bowl. Now it has become a cozy favorite in our kitchen, especially on evenings when we want a simple meal that still feels exciting and full of flavor.

Ingredients
Serves 4
- 600 g / 1.32 lb corn kernels, fresh or frozen
- 1 medium yellow onion, finely chopped (about 150 g / 0.33 lb)
- 1 red bell pepper, diced (about 150 g / 0.33 lb)
- 3 garlic cloves, minced (about 9 g / 0.02 lb)
- 1 tbsp olive oil (about 14 g / 0.03 lb)
- 750 ml / 1.59 lb vegetable or chicken broth
- 240 ml / 0.53 lb heavy cream
- 120 g / 0.26 lb sour cream or Mexican crema
- 1 tsp smoked paprika (about 2 g / 0.004 lb)
- 1 tsp ground cumin (about 2 g / 0.004 lb)
- 1/2 tsp chili powder (about 1 g / 0.002 lb)
- 1/2 tsp salt (about 3 g / 0.007 lb), plus more as needed
- 1/4 tsp freshly ground black pepper (about 0.5 g / 0.001 lb)
- 1 tbsp fresh lime juice (about 15 g / 0.03 lb)
- 30 g / 0.07 lb fresh cilantro, roughly chopped
- 60 g / 0.13 lb crumbled cotija or feta cheese, for serving
Optional toppings
- Extra corn, lightly charred
- Sliced jalapeño
- Lime wedges
- Chili flakes or Tajín-style seasoning
- Crispy tortilla strips
Directions
- Sauté the vegetables: Heat the olive oil in a large soup pot over medium heat. Add the onion and bell pepper and cook for about 4–5 minutes, stirring occasionally, until softened.
- Add the garlic and spices: Stir in the garlic, smoked paprika, cumin, chili powder, salt, and black pepper. Cook for another minute, allowing the spices to become fragrant.
- Add the corn and broth: Stir in the corn, then pour in the broth. Bring the mixture to a gentle boil before reducing the heat to medium-low.
- Simmer: Let the soup cook uncovered for approximately 10–15 minutes. This allows the corn to become tender and gives the flavors time to blend.
- Blend for a creamy texture: Carefully transfer a portion of the soup to a blender and blend until smooth. Return it to the pot and stir well. Alternatively, use an immersion blender and pulse a few times, leaving some whole corn kernels for texture.
- Add the creamy ingredients: Lower the heat and stir in the heavy cream and sour cream or crema. Warm gently without allowing the soup to come to a vigorous boil.
- Brighten the flavor: Stir in the fresh lime juice and adjust the salt, pepper, and chili powder according to taste.
- Serve: Ladle the hot soup into bowls and top with crumbled cotija or feta cheese, fresh cilantro, and any additional toppings you like. Serve with lime wedges for an extra burst of freshness.
Notes
- Fresh or frozen corn: Both work beautifully. Fresh summer corn gives the soup a particularly sweet flavor, while frozen corn makes it convenient year-round.
- For extra smoky flavor: Lightly char some of the corn in a dry skillet before adding it as a topping.
- Cheese options: Cotija is ideal for an authentic street-corn-inspired flavor, but feta is an easy substitute.
- Make it spicier: Add diced jalapeño, cayenne pepper, chipotle powder, or extra chili flakes.
- Dairy-free option: Use a plant-based cooking cream and dairy-free sour cream, and replace the cheese with a dairy-free alternative.
- Thicker soup: Blend a larger portion of the corn mixture. For a chunkier soup, blend only a small amount.
- Storage: Refrigerate leftovers in an airtight container for up to 3 days. Reheat gently over medium-low heat and avoid boiling after adding the dairy.
- Serving idea: Pair it with a fresh green salad, toasted bread, or crispy tortilla strips for a more complete meal.
- Nutrition: Nutritional values will vary depending on the type of cream, cheese, broth, and toppings used.
