This is one of those recipes that quickly became a favorite in our little family. My husband loves traditional shakshouka, but when I served it over crispy toast one morning, he immediately asked me to make it that way again. The combination of the warm, saucy eggs with crunchy bread was simply too good to resist. Now, whenever we want something cozy but don’t want to spend too much time in the kitchen, Shakshouka Toast is one of our go-to meals. It feels special enough for a weekend breakfast but is simple enough for a busy weekday.

  • 4 large eggs (about 200 g / 0.44 lb)
  • 4 slices crusty bread (about 180 g / 0.40 lb)
  • 400 g / 0.88 lb canned diced tomatoes
  • 1 medium red bell pepper, finely chopped (about 150 g / 0.33 lb)
  • 1 small onion, finely diced (about 100 g / 0.22 lb)
  • 2 garlic cloves, minced (about 6 g / 0.01 lb)
  • 1 1/2 tbsp olive oil (about 20 g / 0.04 lb)
  • 1 tsp ground cumin (about 2 g / 0.004 lb)
  • 1 tsp smoked paprika (about 2 g / 0.004 lb)
  • 1/4 tsp chili flakes, or more to taste (about 0.5 g / 0.001 lb)
  • 1/2 tsp salt (about 3 g / 0.007 lb)
  • 1/4 tsp black pepper (about 0.5 g / 0.001 lb)
  • 2 tbsp fresh parsley or cilantro, chopped (about 8 g / 0.02 lb)
  • Optional: 40 g / 0.09 lb crumbled feta cheese

Directions

  1. Prepare the vegetables: Warm the olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper, then cook for several minutes until they begin to soften.
  2. Add the aromatics: Stir in the minced garlic, cumin, smoked paprika, chili flakes, salt, and black pepper. Cook for about 30 seconds, just until the spices become fragrant.
  3. Build the tomato sauce: Pour in the diced tomatoes and stir everything together. Let the mixture gently simmer for approximately 8–10 minutes, allowing the tomatoes to reduce slightly and the flavors to develop.
  4. Cook the eggs: Make four small wells in the tomato mixture and carefully crack an egg into each one. Cover the skillet and cook until the egg whites are set while the yolks remain slightly runny, or cook longer if you prefer firmer yolks.
  5. Toast the bread: While the eggs cook, toast the bread until deeply golden and crisp. You can use a toaster, oven, or skillet.
  6. Assemble: Place the toasted bread on serving plates and spoon the spicy tomato mixture over or alongside each slice. Carefully top with a cooked egg.
  7. Finish and serve: Scatter fresh parsley or cilantro over the top. Add crumbled feta and an extra pinch of chili flakes if desired. Serve immediately while the toast is crisp and the eggs are warm.

Notes

  • Bread: Sourdough, country bread, ciabatta, or another sturdy loaf works particularly well because it holds the tomato mixture without becoming too soft.
  • Spice level: Increase the chili flakes for a spicy version or leave them out for a milder family-friendly dish.
  • Extra vegetables: Spinach, zucchini, mushrooms, or chopped tomatoes can easily be added to the sauce.
  • Cheese: Feta adds a delicious salty contrast, but goat cheese or a little grated Parmesan can also work.
  • Eggs: For creamy yolks, keep a close eye on the skillet and remove it from the heat as soon as the whites are cooked.
  • Serving tip: Assemble the toast just before eating so the bread stays crunchy.
  • Storage: The tomato sauce can be prepared ahead and refrigerated for up to 3 days. Cook the eggs and toast fresh when serving.
