This recipe is one of my favourite slow cooker recipes. It is super easy to throw together, simply place the ingredients in your slow cooker following the simple steps below and leave. Before you know it you have the best, creamy, and peanut flavour infused chicken. Serve this over noodles for a satisfying meal perfect for your whole family!

2/3 c. peanut butter
1 pound boneless skinless chicken breasts, cut into 1” cubes
2 cloves garlic minced
1 c. chicken broth
1 c. shredded zucchini
1 teaspoon sugar
1/3 c. soy sauce
1 tablespoon lime juice
1 red pepper cut into thin, long strips
1 c. chopped cilantro divided
12 oz. linguine noodles cooked and drained
chopped peanuts for garnish
HOW TO MAKE SLOW COOKER THAI PEANUT CHICKEN
Step 1: To a slow cooker, add the garlic, peanut butter, broth, chicken, zucchini, soy sauce, sugar, and red pepper. Mix well until combined.
Step 2: Set to cook for 4 to 5 hours on low or 2 to 3 hours on high. Add the lime juice and half cup cilantro half an hour before serving.
Step 3: When done, garnish with the rest of the cilantro and peanuts, then serve the Thai Peanut Chicken immediately over noodles. Enjoy!
