These Spicy Mexican Donkey Balls are bold, cheesy little bites packed with seasoned meat, Mexican spices, jalapeño, and melty cheese. Crispy and golden on the outside while juicy and flavorful inside, they make an irresistible appetizer for parties, game nights, family gatherings, or casual snacking. Serve them with fresh salsa, creamy avocado dip, or spicy Mexican crema for the ultimate bite.

These spicy little bites quickly became a favorite in our house because they have everything my family loves in one bite—savory seasoned meat, gooey cheese, and just enough heat to keep things exciting. My husband especially loves them straight from the oven when the cheese is still wonderfully melted.

The first time I made them, I expected there to be leftovers for the next day. That never happened! Everyone kept reaching for “just one more,” especially when I put out a bowl of fresh salsa alongside them. Now they’re one of those recipes I make whenever we’re having friends or family over because they’re easy to share and always disappear quickly.

Ingredients

Makes approximately 20–22 balls

For the Donkey Balls

  • 1 lb ground beef — about 450 g (0.99 lb)
  • ½ cup finely diced onion — about 75 g (0.17 lb)
  • 1 jalapeño, finely chopped — about 20 g (0.04 lb)
  • 2 garlic cloves, minced — about 8 g (0.02 lb)
  • 1 teaspoon ground cumin — about 2 g (0.004 lb)
  • 1 teaspoon chili powder — about 3 g (0.006 lb)
  • ½ teaspoon smoked paprika — about 1 g (0.002 lb)
  • ½ teaspoon dried oregano — about 1 g (0.002 lb)
  • ½ teaspoon salt — about 3 g (0.006 lb)
  • ¼ teaspoon black pepper — about 0.5 g (0.001 lb)
  • ½ cup shredded Monterey Jack cheese — about 60 g (0.13 lb)
  • ¼ cup shredded cheddar cheese — about 30 g (0.07 lb)
  • 1 large egg — about 50 g (0.11 lb)
  • ½ cup breadcrumbs — about 50 g (0.11 lb)
  • 2 tablespoons chopped fresh cilantro — about 8 g (0.02 lb)
  • 1 tablespoon lime juice — about 15 g (0.03 lb)

For Coating

  • ¾ cup breadcrumbs — about 75 g (0.17 lb)
  • 1 tablespoon olive oil — about 14 g (0.03 lb)

Optional Dipping Sauce

  • ½ cup sour cream or Mexican crema — about 120 g (0.26 lb)
  • 1 tablespoon lime juice — about 15 g (0.03 lb)
  • 1 tablespoon finely chopped cilantro — about 4 g (0.009 lb)
  • 1 teaspoon hot sauce — about 5 g (0.01 lb)
  • Pinch of salt

Directions

  1. Cook the beef mixture. Heat a skillet over medium heat and add the ground beef. Break it apart with a wooden spoon and cook until browned and no longer pink.
  2. Add the aromatics. Stir in the diced onion, jalapeño, and garlic. Cook for another 3–4 minutes, until the onion softens and the mixture becomes fragrant.
  3. Season the filling. Add the cumin, chili powder, smoked paprika, oregano, salt, and black pepper. Stir thoroughly so the spices coat the meat. Remove from the heat and allow the mixture to cool slightly.
  4. Make the mixture. Transfer the seasoned beef to a large bowl. Add the shredded Monterey Jack, cheddar, egg, breadcrumbs, cilantro, and lime juice. Mix gently until everything is evenly combined.
  5. Shape the balls. Scoop out small portions of the mixture and roll them between your palms into compact balls, approximately 1½ inches (4 cm) wide.
  6. Coat them. Place the remaining breadcrumbs in a shallow bowl. Roll each ball through the breadcrumbs until lightly and evenly coated.
  7. Prepare for baking. Arrange the coated balls on a parchment-lined baking sheet. Lightly brush or spray them with olive oil.
  8. Bake. Place them in a preheated 400°F (200°C) oven and bake for approximately 18–22 minutes, turning them halfway through, until golden brown and cooked through.
  9. Make the dipping sauce. While the balls are baking, combine the sour cream, lime juice, cilantro, hot sauce, and salt in a small bowl. Stir until smooth.
  10. Serve. Let the Donkey Balls rest for a few minutes before serving. Garnish with fresh cilantro and sliced jalapeño, then serve warm with the dipping sauce, salsa, or guacamole.

Notes

  • Make them spicier: Leave the jalapeño seeds in or add cayenne pepper, crushed red pepper, or a little chipotle powder.
  • Milder version: Remove the jalapeño seeds and use mild chili powder.
  • Meat alternatives: Ground turkey or chicken can replace the beef. Because they are leaner, avoid overcooking them.
  • Cheese options: Pepper Jack is excellent if you want additional heat. Oaxaca or mozzarella can also provide a wonderfully melty center.
  • Extra crispy: Air-fry at 375°F (190°C) for approximately 10–14 minutes, turning halfway through.
  • Don’t overmix: Mix the ingredients only until combined to keep the balls tender rather than dense.
  • Make ahead: Shape and coat the balls several hours ahead, cover, and refrigerate until ready to bake.
  • Freezer-friendly: Freeze uncooked balls in a single layer, then transfer them to a freezer-safe container. Bake from frozen, adding several extra minutes to the cooking time.
  • Storage: Refrigerate cooked leftovers in an airtight container for up to 3 days.
  • Best toppings: Serve with chopped cilantro, avocado, pickled jalapeños, diced tomatoes, Mexican crema, or crumbled queso fresco.
