This salmon stack has become one of those meals my husband and I love making when we want something that feels a little fancy without spending hours in the kitchen. My husband especially enjoys the combination of the warm, flavorful salmon with the cool, creamy avocado.

For the Salmon

  • 1.1 lb (500 g) salmon fillets, skin removed

  • 1 tablespoon olive oil — about 15 g (0.03 lb)

  • 2 tablespoons soy sauce — about 30 g (0.07 lb)

  • 2 tablespoons honey — about 42 g (0.09 lb)

  • 1 tablespoon rice vinegar — about 15 g (0.03 lb)

  • 1 teaspoon sesame oil — about 5 g (0.01 lb)

  • 1 teaspoon freshly grated ginger — about 5 g (0.01 lb)

  • 2 garlic cloves, minced — about 8 g (0.02 lb)

For the Rice Stack

  • 1 ½ cups uncooked jasmine rice — about 300 g (0.66 lb)

  • 2 ¼ cups water — about 540 g (1.19 lb)

  • 1 teaspoon salt — about 5 g (0.01 lb)

  • 2 ripe avocados — about 300 g (0.66 lb) flesh

  • 1 tablespoon lime juice — about 15 g (0.03 lb)

  • ½ cucumber, finely diced — about 150 g (0.33 lb)

  • 2 green onions, thinly sliced — about 30 g (0.07 lb)

  • 1 tablespoon sesame seeds — about 9 g (0.02 lb)

For the Garnish

  • Fresh cilantro or parsley, chopped

  • Lime wedges

  • Extra teriyaki sauce, if desired

  • Optional: thinly sliced red chili

Directions

  1. Prepare the rice. Rinse the jasmine rice under cool water until the water runs mostly clear. Combine it with the water and salt in a saucepan. Bring to a boil, then reduce the heat, cover, and simmer for about 15 minutes, or until the rice is tender and the liquid has been absorbed. Let it rest covered for 5 minutes, then fluff with a fork.

  1. Make the teriyaki glaze. In a small bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, grated ginger, and minced garlic.

  1. Prepare the salmon. Pat the salmon dry and cut it into bite-sized pieces or leave the fillets whole, depending on how you prefer to serve the stack.

  1. Cook the salmon. Heat the olive oil in a skillet over medium heat. Add the salmon and cook for approximately 3–4 minutes per side, or until it is nearly cooked through. Pour in the teriyaki mixture and gently turn the salmon to coat it. Allow the sauce to simmer for 1–2 minutes until it becomes glossy and slightly thickened.

  1. Prepare the avocado. Cut the avocados in half, remove the pits, and scoop the flesh into a bowl. Mash lightly with a fork, leaving a few small chunks for texture. Stir in the lime juice and a pinch of salt.

  1. Prepare the cucumber. Dice the cucumber and combine it with the sliced green onions. This adds a crisp, refreshing layer to the stack.

  1. Assemble the stacks. Place a round food ring or small cylindrical mold on each serving plate. Add a layer of rice and gently press it down. Follow with the avocado mixture, then the cucumber and green onion mixture. Top with the teriyaki-glazed salmon.

  1. Finish and serve. Carefully lift away the mold. Sprinkle with sesame seeds and fresh herbs, then drizzle with any remaining teriyaki sauce. Serve immediately with lime wedges.

Notes

  • Salmon: Fresh salmon works best, but skinless frozen fillets can also be used after thawing completely.

  • Rice: Jasmine rice gives the stack a fragrant, fluffy texture. Sushi rice can be used if you prefer a more compact, moldable stack.

  • Avocado: Choose ripe but firm avocados so they mash smoothly without becoming watery.

  • Teriyaki sauce: If you prefer a thicker glaze, simmer it for an extra minute or two before adding it to the salmon.

  • Extra crunch: Add finely diced cucumber, shredded carrots, or toasted cashews for more texture.

  • Spicy variation: Mix a little sriracha or chili paste into the teriyaki sauce for a spicy kick.

  • Make-ahead tip: Cook the rice and prepare the sauce in advance, but assemble the stack just before serving for the best texture.
