Ingredients
  

For the filling:

  • Ground beef 2 lb
  • 1 sweet onion peeled, and chopped
  • 1 red bell pepper seeded & chopped
  • 3 minced garlic cloves
  • 1 cup frozen corn
  • 15 oz crushed tomatoes 1 can.
  • 4 ounces chopped green chilies 1 can.
  • 1 tablespoon cornstarch
  • 2 teaspoons chile powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 1/2 cups shredded cheddar cheese

Tamale Top

  • 2 1/4 cups corn flour masa.
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 + cups chicken broth
  • 1/2 cup melted butter
  • 1/2 cup shredded cheddar cheese

Instructions
 

  • Pre-heat the oven to 400°F. Spray two 9-inch pans with nonstick cooking spray, one 9 X13 inch baking dish or a 12--14 inch cast iron skillet. Set aside.
  • Over medium heat, heat a large saute pan or cast iron skillet. Use a wooden spoon to break up the ground beef. Brown the meat and then add the bell pepper, garlic, and chopped onion to the pan. Allow the onions to soften. Mix in the frozen corn and crushed tomatoes. Turn off the heat and stir well.
  • In a large bowl, combine the corn flour, baking powder, and salt. Mix in the chicken broth, butter and milk. Whisk until smooth. Stir in the cheese.
  • Place the meat mixture in the pans. If you have cooked the meat filling in a cast iron skillet, you can leave the contents in the pan. Spread the corn batter over the top. Bake for 30 to 45 minutes or until a toothpick inserted in the middle of the corn batter comes out clean. Serve warm
