For the Rolls
- 8 rice paper wrappers (about 80 g / 0.18 lb)
- 1 medium carrot, cut into thin matchsticks (about 100 g / 0.22 lb)
- 1 small cucumber, sliced into thin strips (about 120 g / 0.26 lb)
- 1 small red bell pepper, thinly sliced (about 100 g / 0.22 lb)
- 40 g / 0.09 lb fresh cilantro
- 30 g / 0.07 lb Thai basil leaves
- 30 g / 0.07 lb roasted peanuts, roughly chopped
For the Dipping Sauce
- 2 tbsp soy sauce (about 30 g / 0.07 lb)
- 1 tbsp lime juice (about 15 g / 0.03 lb)
- 1 tbsp sweet chili sauce (about 20 g / 0.04 lb)
- 1 tsp honey (about 7 g / 0.02 lb)
- 1 small garlic clove, minced (about 3 g / 0.007 lb)
- 1/2 tsp sesame oil (about 2.5 g / 0.006 lb)
Directions
- Season the beef: Place the thinly sliced beef in a bowl. Add the soy sauce, oyster sauce, sesame oil, brown sugar, garlic, ginger, and chili flakes. Toss thoroughly so the meat is evenly coated. Allow it to marinate for 15–20 minutes.
- Prepare the vegetables: While the beef marinates, slice the carrot, cucumber, and bell pepper into thin, uniform strips. Set them aside with the fresh herbs.
- Cook the beef: Heat the cooking oil in a large skillet over medium-high heat. Add the marinated beef in a single layer and cook for a few minutes, stirring occasionally, until browned and cooked through.
- Add the Thai basil: Turn the heat down slightly and add the Thai basil leaves. Toss everything together for about 30–60 seconds, just until the basil becomes fragrant and slightly wilted.
- Mix the dipping sauce: Combine the soy sauce, lime juice, sweet chili sauce, honey, garlic, and sesame oil in a small bowl. Stir until well combined. Taste and adjust the lime, chili, or sweetness as desired.
- Soften the rice paper: Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for just a few seconds, then place it on a clean, slightly damp work surface. It will continue softening as you assemble the roll.
- Fill the wrapper: Arrange a small amount of cooked beef in the lower-center portion of the wrapper. Add carrot, cucumber, bell pepper, cilantro, Thai basil, and a sprinkle of chopped peanuts.
