Ingredients

For the Beef Filling

  • 1.1 lb (500 g) lean ground beef
  • 0.22 lb (100 g) shallots, finely chopped
  • 0.02 lb (10 g) garlic, minced (3 cloves)
  • 0.01 lb (5 g) fresh ginger, grated
  • 0.04 lb (20 g) soy sauce
  • 0.03 lb (15 g) oyster sauce
  • 0.02 lb (10 g) fish sauce
  • 0.02 lb (10 g) brown sugar
  • 0.02 lb (10 g) sesame oil
  • 0.09 lb (40 g) fresh Thai basil leaves, roughly chopped
  • 0.004 lb (2 g) crushed red pepper flakes (optional)

For the Rolls

  • 0.33 lb (150 g) carrots, julienned
  • 0.33 lb (150 g) cucumber, cut into thin strips
  • 0.11 lb (50 g) red bell pepper, thinly sliced
  • 0.04 lb (20 g) fresh cilantro leaves
  • 16 rice paper wrappers

For the Dipping Sauce

  • 0.04 lb (20 g) soy sauce
  • 0.03 lb (15 g) lime juice
  • 0.02 lb (10 g) honey
  • 0.01 lb (5 g) chili garlic sauce
  • 0.01 lb (5 g) sesame seeds

Directions

  1. Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it into small pieces as it cooks.
  2. Stir in the shallots, garlic, and ginger. Cook for another few minutes until fragrant and softened.
  3. Add the soy sauce, oyster sauce, fish sauce, brown sugar, sesame oil, and red pepper flakes if using. Allow the mixture to simmer briefly so the flavors can blend together.
  4. Remove the pan from the heat and stir in the chopped Thai basil leaves. Let the filling cool slightly.
  5. Prepare the rice paper wrappers according to package directions by briefly soaking them in warm water until pliable.
  6. Place a softened wrapper on a flat surface. Add a spoonful of the beef mixture along with some carrots, cucumber, bell pepper, and cilantro.
  7. Fold the sides inward and roll tightly to form a neat cylinder. Repeat with the remaining ingredients.
  8. In a small bowl, whisk together the soy sauce, lime juice, honey, chili garlic sauce, and sesame seeds to make the dipping sauce.
  9. Serve the rolls immediately with the dipping sauce on the side.

Notes

  • Ground chicken, turkey, or pork can be substituted for the beef.
  • Thai basil provides a distinctive flavor, but regular basil may be used if necessary.
