This dish is a family favorite that I’ve been making for years. It’s not hard to make and the flavor is incredible! The chicken is moist, tender and full of flavor.
This recipe is for those nights when you want something comforting, but don’t want to spend hours in the kitchen. It’s easy, it’s flavorful, and it will become your new go-to chicken recipe.
What You Need:
Four boneless, skinless chicken breasts that have been trimmed of excess fat
1 cup mayonnaise (or Greek yogurt for a healthier option)
1 cup Parmesan cheese, sharp Cheddar or Asiago divided
1 teaspoon seasoning salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
Each chicken breast should be cut into three large pieces or strips. Place the chicken breast pieces/chunks in an oiled bowl. Allow it to soak for between 20-30 minutes or overnight.
Pre-heat oven to 350 F. Combine the mayonnaise, half cup parmesan cheese, and seasonings in a small bowl.
Spread the mixture on the chicken breasts in a 9×13 baking pan. Sprinkle with remaining parmesan.
Bake for 40-45 minutes or until golden brown. To get them more browned, you can broil them for a few minutes.
Serve it with some fresh vegetables, such as these deliciously steamed broccoli. If desired, season with fresh parsley.
