Ingredients:

Chicken:

4 Boneless, skinless chicken breasts cut into bite-sized pieces
3 eggs whisked
1/3 cup Cornstarch
1/3 cup Flour
Oil for frying

Orange Chicken Sauce:

1 cup Orange Juice
1/2 cup sugar
2 Tablespoons Rice Vinegar, or White Vinegar
2 Tablespoons Tamari Sauce Use tamari to make a gluten-free recipe
1/4 teaspoon ginger
Finely dice 1/4 teaspoon Garlic Powder, or 2 cloves of Garlic Powder
1/2 teaspoon red chili flakes
Orange Zest starting at 1 orange
1 Tablespoon Cornstarch

Garnish:

Green Onions
Orange Zest

Instructions:

Make orange sauce with:

Add orange juice, sugar vinegar, soy sauce and soy sauce to a medium saucepan. Heat for 3 minutes.

To make a paste, combine 1 Tablespoon cornstarch and 2 Tablespoons water in a small bowl. Mix in the orange sauce. Cook for another 5 minutes until the mixture thickens. After the sauce has thickened, turn off heat and add orange zest.

To make chickens:

In a small dish or pie plate, combine flour and cornstarch. Salt to taste. Stir.

In a shallow dish, whisk eggs.

Dip chicken pieces into egg mixture, then in flour mixture. Place on a plate.

Over medium heat, heat 2 to 3 inches of oil in heavy-bottomed saucepan. Use a thermometer to monitor the oil’s temperature. It should reach 350 degrees.

Cook several pieces of chicken at a go. Cook for 2 – 3 minutes, turning often until golden brown. Place the chicken on a paper towel-lined plate. Repeat.

Orange sauce is a good choice for chicken. Some of the sauce can be reserved for rice. If desired, garnish it with orange zest and green onion.
