This recipe is the ultimate comfort food! It is a simple and filling meal that will warm you up and get you through any rough day. And, it’s so easy to make!
Ingredients:
3 boneless, skinless chicken breasts cut into cubes or 2 cups of cooked chicken in bite-sized pieces
1/4 cup chopped onions
1/3 cup butter
1 bag frozen mixed veggies
1/3 cup flour
2/3 cup milk
1 1/4 cup chicken broth
Salt and pepper to your liking
1 box cornbread mix (large or small), prepared according to the instructions on the box
Instructions:
Cook chicken in 2 Tablespoons oil in large saucepan. Season cubed chicken with salt and pepper. Cook the chicken for about 10 minutes. Set aside the cooked chicken.
On medium heat, melt butter in large saucepan. Cook onions for 2 minutes. Cook for another 2 minutes. Add frozen vegetables to the pot.
Mix flour with water and continue to stir for 2 minutes.
To avoid lumps, whisk in the chicken broth approximately 1/2 cup at a moment. Add the chicken broth to the milk. Whisk the mixture until combined. Let the mixture simmer for about a minute to thicken. Cook the chicken until it is incorporated. Turn off heat.
Mix the ingredients in a 9×9-inch baking pan or another similar size baking dish.
Add the cornbread mix to the mixture and cover it with a layer of butter.
Bake cornbread according to the instructions on the mix. My cornbread mix suggested baking at 400 degrees for 22 to 26 minutes. Bake the cornbread for a long time so the crust is not burnt.
After the bread has been baked, take it out of the oven and let it cool for five minutes before you serve.
