Funeral potatoes are a popular casserole dish, typically served in the Western United States. They are often served as a side dish to accompany a meal, and can also be used as one of the main dishes in a meal. But which recipe is best? Maybe you think that your recipe for funeral potatoes is the best and most authentic? Or it’s the one your mom always made?

This recipe is my personal favorite, and I know you’ll love it too. I’ve included a few special touches that make these potatoes even more amazing. Trust me – once you try this dish, you’ll be hooked!

INGREDIENTS:

2 (10 oz.) cans of cream of chicken soup

4 cups potatoes, cooked and mashed

2 cups cheddar cheese, grated

1 1/2 cups corn flakes

1 cup sour cream

3 tablespoons unsalted butter, melted

kosher salt and freshly ground pepper, to taste

PREPARATION:

Preheat the oven to 350° F

Mix cream of chicken soup with sour cream in a large bowl. Add mashed potatoes to the bowl.

Add cheddar cheese and season with salt.

Toss the corn flakes in melted butter in a separate bowl until evenly coated.

Place potatoes in a 9×13-inch baking pan and cover with cornflakes.

Bake the baking dish for 45 minutes or until the corn flakes turn golden brown.

Take out of the oven and heat.
