Base:

  • 75g (1/2 cup) finely chopped onion

Creamy Chicken Mixture:

  • 295g (10.5 oz) can condensed cream of chicken soup

  • 240g (1 cup) sour cream

  • 120ml (1/2 cup) milk

  • 225g (2 cups) shredded Colby-Monterey Jack cheese blend

  • 1 oz (28g) packet ranch seasoning mix, divided

  • 1/4 tsp ground black pepper

  • 375g (approx. 3 cups) cooked shredded chicken

Casserole Layers:

  • 900g (32 oz) bag frozen Tater Tots™

  • 60g (1/2 cup) cooked chopped bacon, divided

Garnish:

  • 90g (1/2 cup) chopped fresh tomatoes

  • 15g (1/4 cup) thinly sliced green onions


Directions:

  1. Preheat the Oven: Set your oven to 175°C (350°F). Lightly coat a 13×9-inch baking dish with nonstick spray.

  2. Sauté the Onion: Heat vegetable oil in a skillet over medium. Add onions and cook for 3–5 minutes until softened and fragrant.

  3. Mix the Creamy Filling: In a large bowl, combine sautéed onions, cream of chicken soup, sour cream, milk, 1 cup (112g) of cheese, 2 tbsp of ranch mix, and black pepper. Stir in the shredded chicken until well incorporated.

  4. Create the First Layer: Spread half the frozen tater tots evenly in the baking dish.

  5. Add the Chicken Mixture: Spoon the creamy chicken mixture over the tots, spreading it out in an even layer. Sprinkle 1/4 cup (30g) of the bacon on top.

  6. Season and Add Remaining Tots: Toss the remaining tater tots in a resealable bag with the leftover ranch seasoning. Shake to coat. Layer these seasoned tots on top of the casserole.

  7. Bake: Place the casserole in the oven and bake for 40 minutes.

  8. Add Cheese and Bacon: Remove from oven and sprinkle on the remaining cheese (112g) and bacon (30g). Return to the oven for another 10–15 minutes, until the cheese is melted and the tots are golden brown.

  9. Garnish and Serve: Let the casserole cool for a couple minutes. Top with chopped tomatoes and green onions just before serving. Enjoy while hot!
