Ingredients
  

  • 1 lb Chicken Breast Cut into bite-sized pieces
  • 1 lb Smoked Sausage kielbasa farmers sausage, garlic sausage, etc
  • 1 lb Shrimp raw with shells removed. I left the tails on for extra flavor.
  • 1 Onion diced
  • 1 Green pepper diced
  • 1 Hot pepper jalapeno, serrano, scotch bonnet, habanero, etc (optional!!!)
  • Celery diced 3 ribs
  • 28 oz Diced Tomatoes 28 oz
  • 3 Tbsp Garlic minced
  • 2 C Chicken Broth
  • 1 Tablespoon Cajun seasoning or more if preferred
  • 1 tsp Thyme
  • 1 teaspoon Oregano
  • 1 1/3 C Rice

Instructions
 

  • Mix all ingredients except the shrimp and rice in the slow cooker
  • Cook on low for 6 to 7 hours, stirring occasionally
  • Salt the shrimp lightly in the last hour of cooking. Then, add the shrimp to the crockpot.
  • Stir the rice in the last 30 minutes of cooking. Cover with a new cover. The rice should just warm through, and then take on some of your cooking flavors.
