This cowboy stew recipe is packed with flavor and perfect for a winter night. The beef is cooked until tender, and the vegetables are full of flavor. This dish is sure to become a family favorite.

Ingredients:

4 slices bacon, chopped
2 (12-ounce) packages of kielbasa sausage cut into 1/2 inch slices
Ground beef 1 1/2 lb, 80/20
1 medium onion, diced
3 cloves garlic, minced
3 tablespoons all purpose flour
1 1/2 teaspoons salt
1/2 teaspoon black pepper
1 teaspoon chili powder
1 can (14.5 ounces) petite diced tomatoes with liquid
2 (16-ounce) cans of baked beans with liquid
1 can chopped green chilies (7-ounces), with liquid
1 can sweet corn (11.5 oz) with liquid
2 medium russet potatoes. Peel and cut into 1/2-inch cubes
1 cup water
2 tablespoons parsley, chopped

Instructions:

In a large saucepan, cook bacon until crispy and brown. Transfer bacon to a plate lined by a paper towel and drain using a slotted spoon

Brown the sausage in the pot drippings. Adjust heat to ensure that the sausage (brown bits at the bottom) doesn’t burn. Transfer to a plate and add bacon.

Brown the beef, onion, garlic, and beef in a large pot. Sprinkle flour, salt and pepper on the beef. Stir for one minute.

Diced tomatoes, green chilies and sweet corn are all good options. Bring to boil, then reduce heat immediately and simmer covered for one hour, stirring occasionally.

Garnish with parsley

If stew becomes too thick, add more water.
