For the Gözleme Dough

- Fresh baby spinach (300 g | 0.66 lb)
- Garlic cloves, finely minced (6 g | 0.013 lb)
- Large eggs (2)
- Ground black pepper (2 g | 0.004 lb)
- Soft feta cheese, crumbled (300 g | 0.66 lb)
- Shredded mozzarella cheese (200 g | 0.44 lb)
Option 2: Spiced Lamb or Beef Filling
- Olive oil (15 ml)
- Garlic cloves, minced (6 g | 0.013 lb)
- 1 medium onion, finely chopped (150 g | 0.33 lb)
- Ground lamb or beef (500 g | 1.1 lb)
- 1 bell pepper, diced (120 g | 0.26 lb)
- Baby spinach (90 g | 0.20 lb)
- Ground cumin (3 g | 0.007 lb)
- Paprika (2 g | 0.004 lb)
- Cayenne pepper (1 g | 0.002 lb), optional

Directions
Prepare the Dough
- Add the flour, olive oil, salt, and water to a large mixing bowl. Knead until the dough becomes smooth, soft, and elastic. The dough should feel flexible but not sticky.
- Cover the dough and let it rest for about 20 minutes. This allows the gluten to relax and makes rolling easier.
- Divide the dough into four equal portions.
- Lightly flour your work surface and roll each piece into a thin rectangle, approximately 14 x 8 inches (35 x 20 cm).
Prepare the Filling
Spinach & Feta Filling
- Place the spinach, garlic, eggs, and black pepper in a large bowl.
- Gently squeeze and mix the spinach with your hands until it softens and reduces in volume.
- Add the crumbled feta and combine everything well.
Spiced Meat Filling
- Heat olive oil in a large skillet over high heat.
- Add the onion and garlic, cooking for about 1 minute until fragrant.
- Add the bell pepper and sauté for another 2 minutes.
- Add the ground beef or lamb and cook until browned, breaking it apart as it cooks.
- Stir in cumin, paprika, cayenne pepper, salt, black pepper, and water. Cook for another 2 minutes.
- Add the spinach and cook until wilted. Allow the filling to cool before assembling the Gözleme.
Assemble the Gözleme
- Spread the filling over one half of each rolled dough rectangle, leaving a small border around the edges.
- Add mozzarella cheese over the spinach filling or sprinkle feta over the meat filling.
- Fold the empty half of the dough over the filling to create a sealed pocket.
- Press the edges firmly together, removing any trapped air. Use a little water along the edges if needed to seal.
Cook the Gözleme
- Heat about 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Carefully place the Gözleme in the pan and cook for about 3 minutes until the bottom becomes golden and crispy.
- Flip and continue cooking the other side while gently pressing down with a spatula until both sides are crisp and browned.
- Repeat with the remaining dough pieces.
Serve
- Transfer the cooked Gözleme to a cutting board.
- Cut each flatbread into 6–8 pieces.
- Serve warm with fresh lemon wedges for a bright finishing touch.
