Ingredients
- 6 large eggs (300 g / 0.66 lb)
- 4 medium ripe tomatoes, peeled and finely diced (600 g / 1.32 lb)
- 2 Turkish green peppers or green bell peppers, sliced (180 g / 0.40 lb)
- 1 small onion, finely chopped (optional) (100 g / 0.22 lb)
- 2 garlic cloves, minced (10 g / 0.02 lb)
- 2 tablespoons unsalted butter (28 g / 0.06 lb)
- 1 tablespoon olive oil (15 ml)
- 1 teaspoon Aleppo pepper or mild red pepper flakes
- ½ teaspoon sweet paprika
- Salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh parsley (8 g / 0.02 lb)

Directions
- Heat the butter and olive oil in a large skillet over medium heat.
- If using onion, cook it for 3–4 minutes until softened. Add the sliced peppers and sauté for another 4–5 minutes until tender.
- Stir in the minced garlic and cook for about 30 seconds until fragrant.
- Add the diced tomatoes, Aleppo pepper, paprika, salt, and black pepper. Simmer for 8–10 minutes, stirring occasionally, until the tomatoes break down and most of the excess liquid has evaporated.
- Lightly beat the eggs in a bowl, then pour them evenly over the tomato mixture.
- Gently stir with a spatula, allowing the eggs to cook slowly without overmixing. Leave some soft curds for the authentic creamy texture.
- Remove the skillet from the heat while the eggs are still slightly soft, as they will continue to cook from the residual heat.
- Sprinkle with fresh parsley and serve immediately with warm bread for dipping.
