WATERMELON CUCUMBER SALAD WITH FETA

Watermelon Cucumber Salad With Feta is one of those combinations of flavors that sounds unusual but only fits together so well. Add some crisp and refreshing cucumbers and mint to the mix, and you will enjoy a new and colorful side dish. In this salad, a personal seedless watermelon is just the right size, but it is also possible to use pre-cut melon or some of a bigger squid. Until eating, dress the salad so that the melon and the cucumbers don’t soak the vinaigrette.

One of my fondest summer memories were spitting watermelon seed competitions I ‘d have with friends and relatives. This watermelon salad contains no watermelon seeds, but I couldn’t help looking back to those moments when I was preparing it. On a hot summer day, the fresh watermelon and cucumber make for a tasty and refreshing combination. Try this Watermelon Cucumber Salad With Feta, and enjoy it with your loved ones.

Ingredients:

Large seedless watermelon cut into 1-inch cubes

(2) eaches cucumbers, thinly sliced

(12 )leaves fresh mint, thinly sliced

¼ cup olive oil

2 tbsp apple cider vinegar

(1) pinch coarse salt and ground black pepper

1 cup crumbled feta cheese

Directions:

In a large bowl, gently mix watermelon, cucumbers, and mint. Whisk olive oil, vinegar, salt, and pepper together in a small bowl. Add and drizzle it over the salad and gently toss to coat. Add feta cheese and gently mix.

Note:

And as a heads up, buying the pre-crumbled feta can be tempting, as it’s easier to get and ready to just pour into a salad. The feta blocks are much more flavourful, however, even though they take a touch of more effort to crumble before adding to the platter. Each sort of cucumber is perfect with this watermelon cucumber salad, as long as you extract the seeds before slicing.
