Healthy ramen noodles stir fry

This recipe is so healthy and delicious, and it's perfect for a quick and easy weeknight meal!

Ingredients
  

  • 1 tbsp. vegetable oil
  • 1 large onion chopped
  • 1 chopped red bell pepper
  • 1/2 head broccoli cut into florets
  • 1 lb. Ground beef
  • 6 oz ramen noodles two packets with seasoning packets discarded.
  • Salt and pepper to your liking
  • Sauce
  • 1/4 c. soy sauce
  • 1 tbsp. brown sugar
  • 1 tbsp. apple cider vinegar
  • 2 tsp. sriracha
  • 1 clove minced garlic
  • 1 scallion chopped

Instructions
 

  • Heat oil in a large skillet on medium heat. Cook the onions, peppers and broccoli for 5 minutes. Take out of the pan.
  • Season ground beef with salt and pepper and continue cooking for 5 minutes. Drain the fat and add vegetables to the skillet.
  • Mix soy sauce, brown sugar and apple cider vinegar together.
  • Bring water to boil in a large saucepan. Cook the ramen noodles until tender (2 minutes) Drain.
  • Put cooked ramen noodles in a skillet. Pour sauce over. Mix until well combined. Season with salt and pepper to taste. Garnish with scallions, and then serve.
