Ingredients
  

  • 1 Large Cucumber halved in length and sliced
  • 4 wedges of vine-ripened tomatoes
  • 1/2 red onion thinly sliced
  • 1-2 large Avocados diced
  • DRESSING
  • 1/4 Cup red wine vinegar
  • 1 Tbsp freshly squeezed lemon juice if possible
  • 1 Tbsp minced garlic
  • 1/4 teaspoon Granulated sugar
  • 1 Tsp Dijon mustard
  • 1 1/2 Tsp dried oregano
  • 1/4 Cup Extra-virgin olive oil

Instructions
 

  • In a small bowl, whisk together all dressing ingredients. Set aside
  • In a large bowl, combine avocado, tomatoes, red onions, and cucumbers. Mix in dressing.
