Coconut cream cheese cookies

- 6 ounces cream cheese room temperature
- 3/4 cup butter room temperature
- 1 Cup Light Brown Sugar
- 1/2 cup granulated sugar
- 2 teaspoons vanilla
- 1/2 teaspoon Kosher salt
- 1/2 teaspoon baking powder
- 2 1/4 Cups all-purpose flour
- 2 cups sugared flaked coconut
Pre-heat the oven to 350°F. Line a baking tray with parchment paper.
Mix the butter and cream cheese in a bowl fitted with the stand mixer. Mix in the sugars for one more minute.
Mix in vanilla, salt, baking soda, and continue to mix until smooth. Scrape the sides as needed.
Mix the flour into the mixer on low until it is well combined. Then add the coconut and mix until it is evenly distributed.
Use a large (2-tablespoon) sized cookie scoop to drop the cookie dough onto the prepared baking sheet. Bake the cookies for about 10-12 minutes or until they are golden around the edges. Don't over bake.
Let the cookies cool on a baking sheet for about 3-4 minutes, then transfer them to a wire rack and let cool completely.
