Coconut cream cheese cookies

Ingredients
  

  • 6 ounces cream cheese room temperature
  • 3/4 cup butter room temperature
  • 1 Cup Light Brown Sugar
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla
  • 1/2 teaspoon Kosher salt
  • 1/2 teaspoon baking powder
  • 2 1/4 Cups all-purpose flour
  • 2 cups sugared flaked coconut

Instructions
 

  • Pre-heat the oven to 350°F. Line a baking tray with parchment paper.
  • Mix the butter and cream cheese in a bowl fitted with the stand mixer. Mix in the sugars for one more minute.
  • Mix in vanilla, salt, baking soda, and continue to mix until smooth. Scrape the sides as needed.
  • Mix the flour into the mixer on low until it is well combined. Then add the coconut and mix until it is evenly distributed.
  • Use a large (2-tablespoon) sized cookie scoop to drop the cookie dough onto the prepared baking sheet. Bake the cookies for about 10-12 minutes or until they are golden around the edges. Don't over bake.
  • Let the cookies cool on a baking sheet for about 3-4 minutes, then transfer them to a wire rack and let cool completely.
