Ingredients

  • 2 sticks 8 ounces, cold unsalted butter
  • 3 pounds Ground beef sirloin preferred
  • 1 teaspoon Kosher salt
  • 8 slices Cheese such as American cheese, Swiss, or cheddar (optional).
  • To serve: lettuce tomato slices, and thinly sliced red onions

Instructions

  • Grate the butter. Use the large holes in a box grutter to grate the butter into small, thin pieces. To make it easier to move the butter shards, you can use the wrapper that came with the butter.
  • Make the patties. Spread the butter over the ground beef. Use your hands to quickly and gently incorporate the butter into the beef. The patties should be approximately 4 inches in diameter by 3/4 inch thick.
  • Season the patties. Spread the patties out on a parchment-lined baking sheet. Salt both sides. You don't have to use the entire amount of salt. While you prepare the grill, set aside.
  • Heat the grill to medium-high heat. Use an outdoor grill to heat it directly at medium-high heat. If necessary, clean the grates of the grill.
  • Each side should be grilled for four minutes. Place the patties in one layer on the grill. The burgers should be grilled for four minutes. There will be some flare-ups when the butter melts. Flip the burgers with a thin metal spatula. Grill until they are golden brown and crispy on the outside.
  • Serve the burgers. Place a slice of cheese on each burger after the final minute of grilling. Serve immediately
