Ingredients
  

  • 1 1/2 lb boneless chicken breast
  • 3 medium carrots peeled and diced
  • 3 stalks celery diced
  • 1 medium onion diced
  • Three cloves of garlic minced
  • 6 cups of low-sodium chicken broth
  • 1 cup water
  • 2 bay leaves
  • 1 teaspoon Italian seasoning or more to your taste
  • 2 cups cheese tortellini
  • If desired chop fresh parsley and serve
  • Salt and pepper to your liking

Instructions
 

  • All ingredients except the tortellini should be added to a slow cooker.
  • Cook on low for 6 hrs
  • Take the cooked chicken out of the slow cooker. Shred it or cut it into cubes and then add it back to the slow cooker.
  • Stir in the tortellini. Cook for about 15 minutes, or until the pasta is tender.
  • Salt and pepper to your liking. If desired, discard bay leaves and add chopped parsley to the dish immediately.
