AMAZING BANANA BREAD CAKE WITH CREAM CHEESE FROSTING

Ingredients
  

Banana Cake

  • 1/2 cup 1 stick, butter softened
  • 1 1/2 cups granulated Sugar
  • 2 large eggs
  • 1 cup of sour cream heavy-fat is the best
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup mashed bananas about 3 bananas

Cream Cheese Frosting

  • 1/2 cup 1 stick, butter softened
  • 1 bar 8 oz. Cream cheese full fat is best
  • 1 teaspoon vanilla extract
  • 3 cups powdered Sugar
  • 2 tablespoons heavy whipping crème

Instructions
 

  • Turn oven on to 350°F. Spray a 9x13 baking pan with cooking spray. Set aside.
  • Use a large bowl and a hand mixer to cream butter and sugar until they are light and fluffy.
  • It will appear crumbly, but if you beat it for a few minutes it will become fluffy.
  • Add eggs, sour-cream, and vanilla. Blend until smooth.
  • Add flour, baking soda and salt. Blend on low speed until well combined
  • Mix in the mashed banana. Spread the batter in the baking dish.
  • Cook for between 25 and 35 minutes, or until a toothpick inserted into the middle comes out with moistcrumbs or none. You may need to cook the toothpick a little longer if it comes out with wet batter. The edges and the top will be lightly browned.
  • Before frosting, let the cake cool completely.
  • After the cake has cooled, you have two options: Frost it immediately and serve it or cover it with tin foil so it can sit at room temperature overnight before frosting it.
  • Frosting with Make-Cheese Cheese

Mix butter and cream cheese in a large bowl until well combined. Vanilla extract, powdered Sugar, and heavy Cream are all you need to make this recipe a success. Mix together on low speed until you get a frosting-like consistency.

  • You can add more powdered sugar or milk until you reach the desired frosting consistency. I don't need to add any more powdered sugar or milk than is necessary. To make the frosting cut well, you need it to be thick.
  • * NOTICE: Use heavy whipping cream only. Start with one tablespoon. Heavy cream is thick and you will need more. Lower fat milks will require less.
  • Slice into squares, and top each one with chopped walnuts and banana slices.
