Grown Up Tuna Noodle Casserole Recipe

Ingredients
  

  • 8 oz. Tuna drained or 1.5 c. shredded chicken or turkey breast
  • 3 tbsp. Olive oil
  • 1/2 lg. White onion diced
  • 3-4 med. Bella mushrooms washed and sliced
  • 4 oz Cream cheese
  • 1/2 c. Sour cream
  • 1 10.5 oz can Cream of mushroom soup
  • 3/4 c Milk
  • 8 oz Egg Noodles or Rotini
  • 1 c Colby jack cheese shredded
  • 1 c French fried onions
  • 1 tsp. Garlic powder
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Pre-heat oven to 350°F. Slice the mushrooms and dice the onion. Use cooking spray to lightly grease the baking dish. Make pasta by boiling water. Heat the olive oil in large frying pan on medium heat while the water heats. Once the oil has been heated, add the mushrooms and onions to the pan and cook until translucent. Cook the pasta for 7 minutes.
  • Heat the cream cheese, milk, cream cheese, sourcream, garlic powder and cream cheese in a frying pan until they are hot. Once it's hot, season with salt and pepper.
  • Add the pasta to the saucepan and mix well. Cover the pasta with a towel.
  • Mix the pasta together well. Add the tuna or chicken to the pan. Place the mixture in a baking dish.
  • Sprinkle the cheese over.
  • Sprinkle the French fried onions over it.
  • Bake for 10 minutes at 375°F or until onions are golden brown. Serve immediately.
