One Pot Kielbasa Pasta

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb smoked kielbasa or turkey/chicken sausage sliced 1/4 inch thick
  • 1.5 cups diced onion
  • 2 cloves garlic minced
  • 2 cups low-sodium chicken broth
  • 1 10 oz can diced tomatoes
  • 8 oz dry pasta small pasta
  • 1/2 cup milk or heavy cream
  • 1/2 tsp salt and pepper each
  • 1 cup shredded Cheddar cheese
  • 1/3 cup thinly sliced scallions for garnish

Instructions
 

  • Olive oil can be added to a saute pan of 4-5 quarts over medium heat.
  • Fry the smoked kielbasa with onions.
  • Sauté garlic until fragrant, approximately 30 seconds
  • Mix in chicken broth, tomatoes and heavy cream. Add pasta and seasonings.
  • Let the pasta simmer for at least 15 minutes or until it is tender.
  • Stir in 1/2 cup cheese after removing skillet from heat
  • Cover with the remaining cheese. Continue to bake until cheese is melted and bubbly.
  • Sprinkle with chopped scallions and serve.
  • You can make 4 large portions of this recipe. If you want to feed a larger crowd or have leftovers, I recommend double the recipe. It's worth it! Enjoy!
