One Pot Kielbasa Pasta

- 1 tbsp olive oil
- 1 lb smoked kielbasa or turkey/chicken sausage sliced 1/4 inch thick
- 1.5 cups diced onion
- 2 cloves garlic minced
- 2 cups low-sodium chicken broth
- 1 10 oz can diced tomatoes
- 8 oz dry pasta small pasta
- 1/2 cup milk or heavy cream
- 1/2 tsp salt and pepper each
- 1 cup shredded Cheddar cheese
- 1/3 cup thinly sliced scallions for garnish
Olive oil can be added to a saute pan of 4-5 quarts over medium heat.
Fry the smoked kielbasa with onions.
Sauté garlic until fragrant, approximately 30 seconds
Mix in chicken broth, tomatoes and heavy cream. Add pasta and seasonings.
Let the pasta simmer for at least 15 minutes or until it is tender.
Stir in 1/2 cup cheese after removing skillet from heat
Cover with the remaining cheese. Continue to bake until cheese is melted and bubbly.
Sprinkle with chopped scallions and serve.
You can make 4 large portions of this recipe. If you want to feed a larger crowd or have leftovers, I recommend double the recipe. It's worth it! Enjoy!
