Ingredients
  

CAKE INGREDIENTS:

  • 256 grams 2 cups all-purpose flour
  • 400 grams 2 cups granulated sugar
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 33 grams 1/3 cup unsweetened cocoa powder
  • 240 mL 1 cup buttermilk (or 1 tablespoon vinegar + enough milk to make 1 cup, let sit for an hour)
  • 240 mL 1 cup vegetable oil
  • 240 mL 1 cup boiling water
  • 1 teaspoon vanilla extract
  • 2 large eggs

ICING INGREDIENTS:

  • 200 grams 1 cup granulated sugar
  • 2 tablespoons light corn syrup
  • 60 mL 1/4 cup milk
  • 2 tablespoons unsalted butter
  • 85 grams 1/2 cup semisweet chocolate chips
  • 1 teaspoon vanilla extract
  • miniature marshmallows
  • 40 grams 1/3 cup chopped nuts, optional

Instructions
 

  • Preheat your oven to 175°C (350°F) and grease a 9x13-inch baking pan with cooking spray.
  • In a mixing bowl, combine the flour, sugar, baking soda, salt, and cocoa powder. Whisk until well combined.
  • Add the oil, boiling water, buttermilk, eggs, and vanilla extract. Beat until well mixed.
  • Pour the batter into the prepared pan and spread it evenly.
  • Bake for about 45 minutes or until a toothpick inserted into the center of the cake comes out clean.
  • In a saucepan, combine the milk, butter, corn syrup, and sugar. Stir until well mixed and bring the mixture to a boil for at least 2 minutes.
  • Add the chocolate chips, vanilla extract, and nuts (if using). Stir until the chocolate chips are melted.
