Easy Penuche Fudge

Ingredients
  

  • 400 g brown sugar
  • 225 g 2 sticks unsalted butter
  • 360 g powdered sugar sifted
  • 140 ml can evaporated milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 120 g pecans or walnuts roughly chopped
  • non-stick spray as needed

Instructions
 

  • Grease a 9×5-inch loaf pan with non-stick spray, then line the pan with parchment paper or plastic wrap.
  • In a heavy-bottomed saucepan over medium-low heat, combine the butter and brown sugar until the butter is melted, and the sugar has dissolved (2-3 minutes).
  • Pour in the evaporated milk and bring the mixture to a boil, then remove from heat and let cool for 30 minutes, or until cooled to the touch.
  • Stir in vanilla extract and salt until combined, then beat in powdered sugar working in batches.
  • Once sugar is incorporated, fold in chopped nuts, then transfer mixture to the greased and lined loaf dish.
  • Refrigerate, uncovered, for 20-25 minutes or until set, then slice, serve and enjoy.

Notes

Be sure to sift the powdered sugar to avoid any lumps in the fudge.
If you prefer a softer fudge, reduce the amount of powdered sugar used.
You can substitute the nuts for any other type of nuts or omit them altogether.
Store the fudge in an airtight container in the refrigerator for up to a week.
