Ingredients
  

  • 2 large zucchinis approx. 400g or 0.88 lb
  • 1/2 cup low-carb pizza sauce or tomato sauce
  • 1 teaspoon dried oregano
  • 2 cups shredded mozzarella cheese approx. 200g or 0.44 lb
  • 1/4 cup grated parmesan cheese approx. 25g or 0.055 lb
  • Pizza toppings of your choice

Instructions
 

  • Preheat your oven to 450°F (230°C) and line a baking pan with foil.
  • Slice the zucchinis into 1/4-inch thick rounds and arrange them on the prepared baking sheet.
  • Top each zucchini slice with pizza sauce, oregano, shredded mozzarella, parmesan cheese, and your favorite pizza toppings.
  • Bake the zucchini pizza bites for 5 minutes or until the zucchini is tender.
  • Turn on the broiler and broil for an additional 5 minutes or until the cheese is melted and bubbly.
  • Remove the baking sheet from the oven and let the zucchini pizza bites cool for a few minutes before serving. Enjoy!

Notes

To make this recipe even healthier, try using homemade pizza sauce and adding extra veggies as toppings.
If you don't have a broiler, you can simply bake the pizza bites for an additional 5 minutes until the cheese is melted and bubbly.
These bites can be stored in the fridge for up to 3 days, but they are best enjoyed fresh out of the oven.
