Ingredients
  

  • 1.4 kg 3 lb potatoes, peeled and diced
  • 450 g 2 cups cheddar cheese, grated
  • 450 g 1 lb bacon, cooked and crumbled
  • 1 teaspoon garlic salt
  • 240 ml 1 cup mayonnaise
  • 120 ml 1/2 cup green onions, thinly sliced

Instructions
 

  • Preheat the oven to 165°C (325°F).
  • In a 9x13-inch baking dish, mix together the diced potatoes, cheddar cheese, garlic salt, bacon, and green onions until well combined.
  • Add the mayonnaise and stir until everything is well coated.
  • Bake in the preheated oven until the potatoes are tender and the top is golden brown, about 1 hour and 30 minutes.
  • Remove from the oven and let cool for a few minutes before serving.

Notes

You can use any type of potato for this recipe, but we recommend using a starchy variety such as Russet potatoes for the best texture.
If you're looking for a lighter version of this recipe, you can use turkey bacon and reduced-fat mayonnaise instead of the regular versions.
Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
