Ingredients
  

  • 1 tablespoon olive oil 15 ml
  • 2 tablespoons unsalted butter divided (28 g)
  • 1 pound waxy potatoes such as Yukon gold or baby red, sliced 1/2-inch thick (450 g)
  • 3-4 garlic cloves minced
  • 1 teaspoon fresh thyme 1 g
  • 1 teaspoon fresh rosemary 1 g
  • 1 teaspoon fresh parsley chopped (1 g)
  • 2 teaspoons fresh chives chopped (2 g)
  • 1 1/2 pounds sirloin steak cut into 1-inch cubes (680 g)
  • Kosher salt and freshly ground pepper to taste

Instructions
 

  • Heat a large skillet over medium-high heat and add olive oil and 1 tablespoon of butter.
  • Once hot, add the potatoes, garlic, thyme, and rosemary, season with salt and pepper, and cook for 3 minutes.
  • Stir the potatoes and continue cooking until they are fork-tender, about 3 minutes more. Remove the potatoes from the skillet and set them aside on a plate.
  • Turn the heat up to high and add the remaining butter to the skillet.
  • Season the steak bites with salt and pepper, and add them to the skillet. Let them sear for 1 minute.
  • Stir and continue cooking the steak until browned and cooked to your desired doneness.
  • Add the potatoes back to the skillet, stir, and top with parsley and chives.
  • Serve hot and enjoy!
